How to make chocolate at home
The bakers dilute the old dough and incorporate it while kneading the fresh batch before setting it for overnight fermentation. I guess the method to make these is perfect - and your pics show that . The rolling , folding will give that perfect texture . Now I understand where I have gone wrong . The varkeys are baked and have flaky layers in it.

You can try any desired shapes and place it on a baking tray. Repeat the same process for every layer and fold until it has got into a medium sized square. Fold 1/3rd of the sheet from the side, sprinkle and spread the flour and ghee paste and close it with the other 1/3rd part. On top of this sheet sprinkle flour and ghee/butter.
Mix it and spread it widely across the sheet using a spatula. Grease and prepare the counter top with a generous amount of oil. If not the dough would stick to the surface. Bake in the preheated oven for 45 minutes or until the varkis are brown.

So I had decided I would post plain Varkey and chocolate stuffed Varkey. She was supposed to join us for this Mega BM, however, she said she will post it along with us and I am only glad she is. After her research and experiment, she said the bakeries use a day old dough while making a fresh batch.
